Abstract:

A large food cold chain and a complex meat industry places Brazil into the position of one of the main suppliers and exporters of animal-origin processed food. The same way, expansion of the industrial animal production market has led to competitiveness under a capitalist view and with this perspective, a need to adapt human actions to new functions, in order to reduce costs and enlarge production. Routine activities are long, repetitious and with big workload, requiring wear of protective gear due to frequent use of sharp tools and machine operation. Among the main hazards present, biological risks are the most important due to direct exposure to organs, blood, fecal matter, urine and placental or fetal fluids from slaughtered animals that may be infected with pathogens of zoonotic origin. The present paper discusses the risks to which cold slaughter-house professionals are subject , performing a thorough bibliographical review of the literature that takes into account the main conceptual frame of Biosafety, contributing to improve safety and health conditions of these workers.
