Abstract:

Quality water warranty supply in food services is a relevant subject for public health. The aim of this study was to verify the microbiological quality of 96 water samples of a fast-food chain of the city of Recife and Metropolitan Area and to compare the results to the established by the National Health Department decree nº 518/2004. Each month it was analyzed a sample from one of the manipulation area faucets of the eight investigated stores, analyzing 96 samples along one year, all collected twice. The analyses followed the established methodology of APHA (Standard Methods for the Examination of Water and Wastewater), in order to carry the presence-absence test, considering the potability pattern in national pertinent legislation. Results revealed that 11.46% and 1.04% of samples were positive to total and termotolerant coliforms, respectively. Quality of the available water in the food establishments studied is in alert condition, since a significant percentage of analyzed samples were inappropriate for human consumption considering current legislation, which establish absence of total and fecal coliforms.
