Abstract:

Objective: The aim of this study was to elaborate and validate an assessment tool for Good Practices in School Food and Nutrition Units. Methods: Study performed in the city of Santos (São Paulo – Brazil), held in two stages: 1) Preparation of Checklist for Good Practices in School Food and Nutrition Units (BPAE checklist). 2) Validation of BPAE checklist. This checklist was applied in 76 public schools with other two reference checklists. The sensibility and specificity were estimated by the Receiver Operating Characteristics Curve. School meals nutritionists have evaluated the checklist according by the Likert scale. Results: The BPAE checklist included the items most observed in other checklists. The thematic groups received weights to calculate the percentage of adequacy. After the application of the checklists in schools, it was observed the area under the curve value of 0.79 for the SS-196 checklist and 0.85 for 542-ordinance checklist. These values indicate good ability of BPAE checklist to identify inadequacies. The BPAE checklist has received positive assessment of the Nutritionists of School Meal Service. They revealed that the present checklist will assist in decision-making under the quality control. Conclusion: After the completion of all steps, the BPAE checklist has been validated and can be an important instrument for the quality control of the school meals.
